Guest guest Posted July 24, 2000 Report Share Posted July 24, 2000 * Exported from MasterCook * Mushroom Pizza With Thyme Recipe By :Cooking Light, June 2000 Serving Size : 4 Preparation Time :0:00 Categories : Meatless Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup chopped fresh parsley 2 teaspoons chopped fresh or 1/2 teaspoon dried thyme 2 garlic cloves -- minced 2 teaspoons olive oil 4 cups sliced cremini mushrooms -- (about 10 ounces) 3 tablespoons fresh lemon juice 1/2 teaspoon salt 1/4 teaspoon black pepper 1/2 recipe Whole-Wheat Pizza Dough Cooking spray 1 tablespoon yellow cornmeal 1/4 cup (1 ounce) grated fresh Parmesan cheese 1. Preheat oven to 500°. 2. Combine first 3 ingredients in a small bowl. Set aside. 3. Heat oil in a large nonstick skillet over medium-high heat. Add mushrooms and juice, and sauté 5 minutes. Stir in 2 tablespoons parsley mixture, salt, and pepper. 4. Roll dough into a 12-inch circle on a floured surface. Place dough on a 12-inch pizza pan or baking sheet coated with cooking spray and sprinkled with cornmeal. Crimp edges with fingers to form a rim. Top with mushroom mixture. 5. Bake at 500° for 12 minutes or until browned. Remove from oven; top with tablespoons parsley mixture and cheese. Cut the pizza into 4 wedges. Yield: 4 servings (serving size: 1 wedge).
