Guest guest Posted July 24, 2000 Report Share Posted July 24, 2000 * Exported from MasterCook * Egyptian Chickpea Patties Recipe By :Some Like it Hot, Robin Robertson Serving Size : 8 Preparation Time :0:00 Categories : Some Like It Hot Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons bulgur -- (medium) 2 tablespoons fresh lemon juice 2 cups cooked chickpeas -- drained 1/2 teaspoon salt 1/4 teaspoon freshly ground pepper 1/8 teaspoon cayenne 1/8 teaspoon ground cumin 1/4 cup minced fresh parsley 1 tablespoon olive oil safflower oil for frying Combine the bulgur and lemon juice in a small bowl and let stand for 15 minutes. In a food processor, combine the chickpeas, salt, pepper, cayenne, cumin, parsley, bulgur mixture, and olive oil, blending thoroughly. Taste and adjust the seasonings. Form the mixture into patties, using about 2 tablespoons of the mixture for each one. Heat the safflower oil in a large skillet over medium-high heat using enough oil to cover the bottom of the pan. When hot, add 3-4 patties at a time, and cook about 2 minutes on each side, until lightly browned. Drain the cooked patties on paper towels. Repeat until all of the patties are browned.
