Guest guest Posted July 24, 2000 Report Share Posted July 24, 2000 * Exported from MasterCook * Banana Bread Recipe By :Eating Well for Optimum Health - Andrew Weil, M.D. Serving Size : 9 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 to 5 very ripe bananas 3/4 cup honey -- liquefied in microwave (30 seconds) 1/4 cup light olive oil 2 teaspoons vanilla extract 2 cups whole wheat pastry flour -- sifted 2 teaspoons baking soda 3/4 cup walnuts -- chopped Preheat oven to 350F. Mash the bananas thoroughly and mix well with the honey, olive oil, and vanilla extract. Mix seperately the sifted flour, baking soda, and walnuts. Blend the dry ingredients into the wet ones, stirring until just mixed. Put the batter into a nonstick 8-inch-square baking pan and bake for 45-60 minutes until a knife inserted in the center comes out clean. Remove from oven, let cool slightly, and remove from pan.
