Guest guest Posted July 23, 2000 Report Share Posted July 23, 2000 I was doing some straightening-up and located this recipe which I don't *think* I sent when this cookbook was cookbook of the week, if I already did, chalk it up to old age. * Exported from MasterCook * Roasted Vegetables, Moo Shu Style Recipe By :Simply Vegetarian - Sue Spitler Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- vegetable cooking spray 1 pound Chinese long beans, or snow peas 1 pound mushrooms -- sliced 4 medium zucchini -- cut lengthwise into halves, sliced 1 medium onion -- thinly sliced 3/4 to 1 teaspoon 5-spice powder salt and pepper to taste 12 flour tortillas 3/4 cup plum sauce 2 cups fresh, or canned, bean sprouts -- drained 2 medium carrots -- shredded fresh cilantro leaves for garnish Spray aluminum foil-lined jelly roll pan with cooking spray. Cut long beans into 2-inch pieces. Arrange beans, mushrooms, zucchini, and onion in single layer on pan. Spray vegetables generously with cooking spray and sprinkle with 5-spice powder. Roast vegetables at 425 degrees until tender-crisp, about 25 minutes. Combine vegetables in bowl; season to taste with salt and pepper. To serve, spread 1 tablespoon plum sauce in center of each tortilla. Spoon roasted vegetables onto tortillas; top with bean sprouts, carrots, and cilantro leaves and roll uup, tucking up one end to hold.
