Apple Brown Betty Bread (1 1/2 lb loaf)

1 1/4 c buttermilk

2 tbsps unsweetened applesauce

2 c whole wheat flour

1 c bread flour -- or unbleached white flour

1/3 c old-fashioned rolled oats

1 tbsp oat bran

1 tbsp crushed wheat cereal -- or bulgur

1 tsp salt

1/4 tsp baking soda

2 tbsps brown sugar

1 tsp cinnamon

1 pinch freshly ground nutmeg

4 tsps butter

2 tsps active dry yeast

1/3 c lightly floured raisins

 

Pour buttermilk and applesauce into bread machine.

 

In a mixing bowl or large 4-cup measure, combine and stir together flours,

oats, bran, wheat cereal, salt, soda, sugar, cinnamon and nutmeg. Pour

mixture into bread machine.

 

Place 1 tsp butter into each corner of bread machine container. Make a well

in the center of dry ingredients and add yeast into it.

 

Set machine for 1 1/2 lb loaf. At signal, add raisins.

apple harvest - a crunchy cinnamonny apple and oatmeal treat. " She combined

her Grandma's recipe and a favorite buttermilk soda bread to come up with

this tasty bread machine loaf.
