Oven-Fried Potatoes

Amount Measure Ingredient -- Preparation Method

3 medium unpeeled baking potatoes (organic)

2 tablespoons fresh lemon juice

2 teaspoons extra-virgin olive oil

1 1/2 teaspoons fresh rosemary -- chopped fine

OR

1 teaspoon dried rosemary -- crumbled

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

2 cloves garlic -- minced

vegetable cooking spray

 

Preheat oven to 400F.

 

Wash and dry the potatoes and cut them in half lengthwise. Cut each half into 4

equal wedges.

 

Mix all the remaining ingredients (except the cooking spray) in a large bowl.

Add the potatoes and toss well to coat.

 

Place the potatoes skin side down on a baking sheet coated with vegetable

cooking spray. Do not crowd pieces.

 

Bake for 45 minutes or until tender and lightly browned.
