McDougall Cheese Sauce & Creamy Scalloped Corn

Dianne, I'm responding to the lists because of the the Cheese sauce servings

question.

I'm afraid I got this from a list, rather than the McDougall book, so it did

say 1 serving. I'd tend to say, however, if we looked at 1/4 cup per

serving, we'd be looking at about 10 (2 cups of water and the potatoes?).

Do you think that's about right? Perhaps someone with the book could check

for us. <hint hint>

 

I don't know why my post might be coming through double. I did respond to

each list, so perhaps you've received it twice that way?

 

Here's another recipe (with servings!) that could use some of the upcoming

corn season's deeeeee-licious corn!:

Creamy Corn Scallop

 

Recipe By :

Categories : Casseroles & Crockpots Low Fat (Under 30%)

Vegetarian

 

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 10.75 oz. can Campbell's® 98% fat free Cream of Mushroom

Soup

2 tablespoons dried onions

1/2 teaspoon dry mustard -- or 1 tea prepared

1/8 teaspoon freshly ground black pepper

2 teaspoons sugar -- or sweetner equiv.

2 cups frozen corn -- thawed

1 cup reduced fat Ritz® crackers -- crushed

 

Preheat oven to 350º F.

 

In a medium bowl, combine mushroom soup, onion flakes, mustard, black pepper

and sugar or it's sweetner equivalent.

Mix in corn and cracker crumbs.

Pour into an 8x8 " baking dish that's been coated with butter-flavored

cooking spray. Bake 25 minutes.

BTW,

how may servings are really in the " cheese " sauce?
