Chocolate-Peanut Butter Smoothie

1 cup chocolate soy milk -- chilled

1 small banana -- sliced and frozen

2 tablespoons smooth natural peanut butter

1/2 cup crushed ice -- (optional)

 

2 servings—Dairy-free

 

Chocoholics will love this dark, rich, smoothie, with its perfect balance

of chocolate, fruit and nutty flavors. Let the high-protein version sit

for a bit, then spoon it up like chocolate mousse. To reduce the fat in

this shake, drain the oil from the top of the jar of peanut butter and do

not stir before using. Adding soy powder boosts the protein to 23 grams.

 

In blender, combine soy milk, banana and peanut butter. Blend until smooth

and creamy. With blender running, add ice if using and blend until almost

smooth. Serve right away.

 

Per serving: 226 cal.; 8g prot.; 10g total fat (1g sat. fat); 27g carb.; 0

chol.; 117mg sod.; 2g fiber

 

High-protein variation: Follow the recipe but increase soy milk to 2 cups

and add 2 tablespoons soy protein powder.
