Guest guest Posted July 19, 2000 Report Share Posted July 19, 2000 * Exported from MasterCook * Apple Kanten with Maple Tofu Cream Recipe By :The Soy Zone - Barry Sears, Ph.D. Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Kanten 1 cup apple juice 1 teaspoon pure vanilla extract (non-alcohol, glycerine base) 1 tablespoon agar flakes Tofu Cream 8 ounces extra-firm tofu -- blanched 1 1/3 teaspoons almond butter 2 teaspoons sugar 1/2 teaspoon pure vanilla extract (non- alcohol, glycerine base) 1 teaspoon maple extract Combine apple juice, vanilla, and agar flakes in small saucepan and simmer for 5 minutes, stirring occasionally until agar dissolves. Pour into dessert dish (or individual dessert dishes), leaving about 1/2 inch for the tofu cream topping. Combine tofu, almond butter, sugar, vanilla, and maple extract in blender. Process on medium until smooth. Add 1 or 2 tablespoons of apple juice if necessary to help the ingredients blend.
