Mary Ann's Orange Loaf Cake

1 cup sugar

1/3 cup reduced-calorie stick margarine -- softened

1/2 teaspoon orange flavoring

3 large egg whites

1 carton lemon low-fat yogurt -- (8-ounce)

1 2/3 cups all-purpose flour

1/2 cup oat bran

1 teaspoon grated orange rind

1/2 teaspoon baking soda

1/4 teaspoon salt

Cooking spray

 

1. Preheat oven to 350°.

 

2. Beat sugar and margarine at medium speed of a mixer until light and fluffy.

Add orange flavoring and egg whites; beat well. Add yogurt; beat well. Lightly

spoon flour into dry measuring cups, and level with a knife. Combine flour, oat

bran, orange rind, baking soda, and salt in a small bowl. Gradually add flour

mixture to sugar mixture, stirring just until moist. 3. Coat an 8-inch loaf pan

with cooking spray; spoon cake batter into pan. Bake at 350a for 1 hour and 5

minutes or until a wooden pick inserted in center comes out clean. Cool in pan

10 minutes on a wire rack; remove from pan. Cool completely. Yield: 8 servings

(serving size: 1 slice).

out to be a good way to fill the craving. Also, they're a good treat for our two

young sons because we want them to learn how to eat healthfully. I've found this
