Not that we're endorsing this program -- just posting recipes for those who may be interested. Karen * Exported from MasterCook * Black Beans al Fresco Recipe By :The Soy Zone, Barry Sears Serving Size : 1 Preparation Time :0:00 Categories : The Soy Zone Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/3 teaspoons olive oil 1 large clove garlic -- minced 1 tablespoon fresh parsley -- chopped 1 tablespoon fresh basil -- chopped 1 teaspoon dried rosemary 8 ounces extra firm tofu -- cubed 1 cup canned black beans -- drained & rinsed 3 tablespoons vegetable stock 1 teaspoon lemon juice -- or to taste salt & freshly ground pepper to taste Heat oil in medium saute pan over medium heat. Add minced garlic, parsley, basil, and rosemary. Cook for 1 minute to blend flavors. Add tofu and saute until golden brown. Add black beans, vegetable stock, and lemon juice. Stir in salt & pepper. Taste and adjust seasonings. Cook, stirring mixture, until heated through, about 5-10 minutes. Serve hot.
