Guest guest Posted July 16, 2000 Report Share Posted July 16, 2000 * Exported from MasterCook * Tex-Mex Tofu Wraps Recipe By : Healthful Cooking w/Mary Carroll, www.startrib.com 7/13/00 Serving Size : 8 Preparation Time :0:00 Categories : Beans And Legumes Sandwiches Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound tofu -- frozen and thawed 2 cups prepared low-fat salsa -- divided 2 cups low-fat refried beans 8 10 inch flour tortillas -- warmed 1 cup shredded part-skim mozzarella cheese 1 cup shredded lettuce 1/2 cup chopped tomatoes Serves 8. One simple frozen-tofu recipe is this Mexican-style wrap. Make sure you plan 5 to 6 hours ahead to allow the tofu to freeze solid, then thaw before crumbling. Squeeze thawed tofu to remove excess moisture. Place in a small bowl and mash with fork. Stir in 1 cup salsa. Cover and refrigerate 30 minutes, stirring occasionally. Heat beans in small covered saucepan over low heat. To assemble wraps, place a large spoonful of marinated tofu on each tortilla. Top with beans, cheese, lettuce and tomatoes. Serve with remaining salsa.
