Here is a vegetarian cheese that looks interesting. It is 7 points for the

whole recipe. Haven't tried it but might someday when I'm creative :)

A DIFFERENT RICE SALAD

Amount Measure Ingredient -- Preparation Method

1 cup brown rice

1 1/2 cups water

--VINAIGRETTE--

6 tablespoons vegetable oil

2 tablespoons olive oil

3 tablespoons lemon juice

1 tablespoon red wine vinegar

3 garlic cloves -- minced

salt and pepper

1 tablespoon soy sauce

1 pinch cayenne pepper -- to taste

1 teaspoon basil

1/2 cup pineapple -- chopped

-----VEGETABLES-----

2 finely chopped green onions

1/4 medium diced green bell pepper

1/4 cup raisins -- optional

1 medium carrot -- julienned

 

Rinse rice & drain well. Combine rice & water. Bring to a boil, reduce heat &

simmer for 45 minutes, or until the rice is cooked & the water has been

absorbed. While the rice is cooking, prepare the vinaigrette. While the rice

is still hot, stir the rice into the vinaigrette & stir well. Add the

vegetables & mix. Cover tightly & refrigerate until ready to serve.

 

VARIATION: Substitute the lemon juice with orange juice.

 

JENN'S LOWER FAT VERSION: Use only 3 tbsp of olive oil, no vegetable oil, and

increase the lemon juice to 6 tbsp, and the red wine vinegar to 2 tbsp

NOTES : Per serving: 313.5 cal, 19.1g (53.6%) fat, 2.4g fibre, 149mg sodium,

33.9g carbs, 3.3g protien

Per serving (using lower fat notes): 215.3 cal, 7.7g (31.4%) fat, 2.4g fibre,

149mg sodium, 34.7g carbs, 3.4g protien

 

Per serving (using lower fat notes): 4.47 points
