Preheat oven to 375°. 2. Lightly spoon flour into dry measuring cups, and level with a knife. Combine flour, 1/4 cup sugar, baking powder, and salt in a bowl; cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal. Stir in lavender. Add milk and egg, stirring just until moist. 3. Turn dough out onto a lightly floured surface. Knead 5 times. Roll into a 9 x 7 inch rectangle. Spread apricot preserves over dough, leaving a ½-inch border. Beginning with long side, roll up jelly-roll fashion, pinch seam to seal (do not seal ends of roll). Cut roll into 9 (1-inch) slices. Place slices, cut sides up, in an 8-inch round cake pan coated with cooking spray. Sprinkle the slices with 1 1/2 teaspoons sugar. Bake at 375° for 35 minutes or until golden brown and a wooden pick inserted in center comes out clean. Yield: 9 servings. NOTE: To freeze for up to 1 month, place swirls in an airtight container, or wrap in heavy-duty plastic wrap or foil. Unwrap and thaw at room temperature 2 hours before serving.
