Here is an interesting salad. The origional is 4 points while the lower fat

version is only 2 points.

ABIDJAN CABBAGE SALAD

Amount Measure Ingredient -- Preparation Method

4 cups cabbage -- thinly sliced

1 cup shredded carrots

1 cup pineapple chunks in juice

1 lemon -- juice of

1 orange -- juice of

1/4 teaspoon salt

2 tablespoons vegetable oil

 

Place cabbage, carrots & pineapple into a large bowl. Mix the dressing by

whisking all the ingredients together till creamy or by drizzling the oil into

the juices while in a blender. Thoroughly blend the dressing & the vegetables.

Refrigerate or serve immediately.

JENN'S LOWER FAT NOTES: Instead of using 1/3 cup (5.5 tbsp) of oil use only 2

tbsp.
