Here is a fast and easy rice dish that is done in 10 min. The origional is 8

points, while my lower fat version is only 5 points for about a cup serving.

Low-Fat Rice And Grains

 

Amount Measure Ingredient -- Preparation Method

16 ounces tomato sauce

1/2 cup water

3 teaspoons chili powder

1 1/2 cups instant rice

1/2 cup tortilla chips -- crushed

1/2 cup shredded cheddar cheese

 

Combine tomato sauce, water and chili powder in a medium sized saucepan. Bring

to a full boil. Stir in rice. Cover, remove from heat and let stand for 10

minutes. Sprinkle with tortilla chips and cheese. Serve with shredded lettuce

and sour cream if desired.
