I really don't need another recipe for Black Bean salad, but the dressing

on this one is different than the salsa type I usually use. Kathleen

Amount Measure Ingredient -- Preparation Method

***DRESSING***

1/4 cup red wine vinegar

2 tablespoons olive oil

1 teaspoon lemon juice

1 clove garlic -- minced

2 teaspoons sugar

***REMAINING INGREDIENTS*** -- rinsed and drained

15 ounces canned black beans -- rinsed and drained

1 cup white corn niblets

1 cup chopped red bell pepper

1/4 cup chopped fresh parsley

 

Whisk together dressing ingredients. Combine remaining ingredients and

toss with the dressing.

 

Serves 9. Per 1/2-cup serving: 87 calories, 3.5 grams fat, 3 g fiber, 149

milligrams sodium.
