Kathleen * Exported from MasterCook * Black Bean Salad (Prevention Magazine) Recipe By : Prevention Magazine, July 2000 Serving Size : 9 Preparation Time :0:00 Categories : Beans And Legumes Salads, Main Dish Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- ***DRESSING*** 1/4 cup red wine vinegar 2 tablespoons olive oil 1 teaspoon lemon juice 1 clove garlic -- minced 2 teaspoons sugar ***REMAINING INGREDIENTS*** -- rinsed and drained 15 ounces canned black beans -- rinsed and drained 1 cup white corn niblets 1 cup chopped red bell pepper 1/4 cup chopped fresh parsley Whisk together dressing ingredients. Combine remaining ingredients and toss with the dressing. Serves 9.
