Nutty Mushroom Pilaf

2 tablespoons olive oil

5 ounces long-grain brown rice -- quick cook

pinch ground turmeric

1 onion -- sliced

4 ounces brown cap mushrooms -- wiped and sliced

2 ounces pine nuts

2 tablespoons fresh mixed herbs -- chopped

350 milliliters boiling water

salt and pepper -- to season

several fresh herb sprigs -- to garnish

 

Heat one tablespoon of the olive oil in a large pan and stir in the rice and

turmeric. Cook gently for 3 minutes, stirring the rice constantly. Add 350 mls

boiling water and bring to the boil. Cover and cook over a gentle heat for

25-30 minutes, or until the rice is just tender and all of the liquid has been

fully absorbed.

Meanwhile, heat the remaining olive oil in a frying pan and add the onion.

Saute for 2-3 minutes, then stir in the mushrooms and nuts. Add the chopped

herbs and season. Cook for a further 3-4 minutes. Stir the mushroom and nut

mixture into the cooked rice with a fork. Serve the pilaf at once, garnished

with sprigs of fresh herbs.
