Guest guest Posted July 13, 2000 Report Share Posted July 13, 2000 Here is a dressing someone on the fth list sent me and I thought I'd share it Its 1 point per 2 tbsp which is good I'll be making this this weekend and bringing this and a salad over to my friends place for supper Jenn Ottawa, Ontario, Canada http://tlotc.dhs.org/jenn/ * Exported from MasterCook * TOFU DRESSING Recipe By : " Kim Sinclair " <sinclai Serving Size : 8 Preparation Time :0:00 Categories : 9 Point Done By Dotties Calculator Salads & Dressings 1 Point Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 pound firm lowfat tofu -- lowfat 1 1/2 tablespoons balsamic vinegar 2 cloves garlic 1/2 teaspoon Dijon mustard 1/4 cup water -- or veggie stock 2 tablespoons olive oil 1 1/2 teaspoons dill salt and pepper -- to taste Place the tofu, vinegar, garlic, and mustard in a blender. Blend until pureed. Combine the water (or stock) with the oil. While the motor is till running, add the mixture to the food processor. Just before you serve the dressing, add the dill, salt, and pepper. Makes (1 cup) 8 (2 tablespoons) servings. NOTES: This is a nice, creamy dressing.
