Here is the last acorn squash recipe I'll send tonight ( I promise) :) This

recipe looks like one you may get in a fancy restaurant with the pine nuts and

all :) and it is only 2.55 points for 1/2 a squash :) add a soup or a salad

for a light lunch or add both for a dinner :) I don't know about you but I find

squash very filling :)

Amount Measure Ingredient -- Preparation Method

2 squash, acorn -- halved and seeded

2 tablespoons pine nuts

1 garlic clove -- minced

1/4 cup sliced green onions

1 1/2 teaspoons oil

1 cup sliced mushrooms

1/2 cup zucchini -- diced

1/2 cup yellow squash -- diced

1 cup diced tomatoes

2 teaspoons lemon juice

2 teaspoons oregano

2 teaspoons basil

1/4 teaspoon salt

1/2 teaspoon black pepper

 

Preheat oven to 375F. Place squash, cut side down, on a baking sheet & cook

until tender, about 45 minutes. Set aside to cool. Scoop out the inside &

discard the seeds & strings. Saute pine nuts & green onions in oil for 1

minute. Add mushrooms,

zucchini, yellow squash & tomatoes & saute until just about tender, 5 minutes

or so. Stir in the remaining ingredients. Spoon the vegetable mixture into the

squash shells. Serve immediately.

 

Makes 4 servings.
