Stuffed Pasta Shells

Amount Measure Ingredient -- Preparation Method

8 ounces lite tofu -- drained and pureed

8 large pasta shells

8 ounces frozen spinach -- defrosted

1 small onion -- diced

1/2 cup Parmesan cheese

2 cloves garlic -- mashed

1 tablespoon olive oil

1 1/2 cups Tomato Sauce

1/8 teaspoon freshly ground nutmeg

zest of one lemon

salt and pepper to taste

 

Saute the onion in olive oil for a few minutes.

 

Squeeze excess water from the spinach and chop finely.

 

Add garlic and spinach to the onions and saute over low heat for five minutes.

 

Remove from heat. Add tofu, cheese, lemon zest, and seasoning. Mix well.

 

Bring salted water to a boil. Drop in the shells and cook until al dente.

 

Stuff the shells with tofu spinach stuffing.

 

Arrange the stuffed shells in a greased baking pan.

 

Top with tomato sauce.

 

Cover with foil and bake in a 400 degree oven for 20 minutes.

 

Remove foil and contnue to bake for another 10 minutes.
