Brush olive oil on portabellas and saute or grill for two minutes or until brown. Mix Parmesan cheese, salt, and pepper into mashed potatoes. Thickly coat both sides of the portabellas with the mashed potato mixture. Bake for about 15 minutes or until brown. Serve immediately.
