Portabella Stew

Amount Measure Ingredient -- Preparation Method

4 packages sliced portabellas -- 6-ounces each

2 packages button mushrooms quartered -- 8-ounces each

1/2 tablespoon olive oil

1 medium onion -- minced

6 cloves garlic -- minced

3 carrots -- sliced

1/2 cup red wine

1/2 cup vegetable broth

1 teaspoon thyme

2 tablespoons capers -- chopped

1 teaspoon rosemary -- crushed

coarse salt -- to taste

freshly ground pepper -- to taste

1 orange -- sliced

1 lime -- sliced

parslied rice

 

Serves 6

 

Heat oil in large cast-iron skillet. Add onion and garlic and cook over

medium heat for 10 minutes or until brown. Add mushrooms and

carrots. Saute until mushrooms begin to release their liquid. Add wine

and broth. Stir and bring to a simmer. Add thyme, rosemary, salt, pepper,

and capers. Cook on high for about 15 minutes until volume is reduced by

half. Serve on parslied rice and garnish with orange and lime slices.
