Guest guest Posted July 14, 2000 Report Share Posted July 14, 2000 * Exported from MasterCook * Portabella Burritos Recipe By : brochure from Terry Farms, 1999 Serving Size : 4 Preparation Time :0:00 Categories : Beans And Legumes Main Dishes, Vegetarian Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 packages portabellas -- 6-ounces each 1 red pepper -- sliced 1/2 large red onion -- chopped 2 tablespoons vegetable oil 1 package taco seasoning mix 1/3 cup water 12 ounces canned refried beans 1/2 cup salsa 8 6-inch flour tortillas 1 cup lettuce -- shredded 1 cup tomato -- diced 1 cup cheese -- shredded (Cheddar or Monterey Jack) lime slices -- optional chopped cilantro -- optional hot peppers -- optional Serves 4 Slice portabellas into thin strips, halve and chop stems. In a large nonstick skillet, saute portabellas, red pepper, and onion in vegetable oil for about 5 minutes, stirring frequently. Add seasoning mix and water, bring to a boil; remove from heat and set aside. In a small saucepan, combine refried beans and salsa. Heat mixture, stirring occasionally. Heat tortillas in a warm oven. Spread 1/8 of bean mixture on the center of the tortilla; top with 1/8 of the portabella mixture. Add lettuce, tomato, cheese, and other toppings you desire. Fold tortilla over filling. Garnish with lime, cilantro, and hot peppers. Serve immediately.
