Samosas

Amount Measure Ingredient -- Preparation Method

2 tablespoons vegetable oil

1 small onion -- finely chopped

1/4 teaspoon garlic paste

1/2 teaspoon ground cardamom

1/2 teaspoon ground cumin

1/2 teaspoon ground turmeric

1/2 teaspoon cayenne pepper

1 teaspoon ground coriander

1/8 teaspoon ground ginger

1/8 teaspoon ground fenugreek

1/4 teaspoon salt

1 small potato -- cooked and diced

5 ounces mixed vegetables -- cooked and diced

8 sheets filo pastry -- (8 to 10)

butter or margarine -- melted

 

Preheat the oven to gas mark 7, 425F, or 220C. Heat the oil and fry the onion

until soft. Add the garlic paste, spices and salt and cook for 30 seconds,

stirring all the time. Add 1 tablespoon of water, the potato and the other

vegetables, mixing them well.

Cut the pastry into four strips about 9cm x 35cm (3 1/2 in x 14 in). Brush with

melted butter or margarine. Place a spoonful of filling on one corner of each

strip and fold over, down, sideways and down, repeating all the way to the

bottom of the strip to form triangular parcels.

Place on a buttered baking sheet and bake for 10 minutes or until the pastry is

brown and crisp. Serve with dhal.
