Pita Bread Salad

1 large pita bread

1 cup chopped parsley

1 small green bell pepper -- diced

1 cucumber -- peeled, and cut into 1/2-inch thick slices

2 medium tomatoes -- cut in 1 " cubes

8 radishes -- cut into 1/4-inch slices

4 scallions -- diced

8 romaine lettuce leaves

1 garlic clove -- mashed

1 tablespoon oregano

1 tablespoon mint

1/4 cup olive oil

1/2 cup lemon juice

salt to taste

 

Toast the pita bread in 375 degree oven until golden brown. Then break into one

inch pieces.

 

In the salad bowl, tear lettuce into small pieces as you would for a tossed

greed salad.

 

Add the remaining cut vegetables, toasted bread, mint, and oregano.

 

In a small bowl, mix mashed garlic with lemon juice, olive oil, and the

seasoning.

 

Wait until just before serving to mix the salad with the dressing to avoid

softening the bread.
