" - Sanaa Abourezk Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup boiled soybeans 1 cup chopped onion 2 stalks celery -- chopped 2 medium potatoes -- peeled and diced 3 Swiss chard leaves -- cut into 1/2-inch strips 1/2 cup green peas 1/2 cup chopped chives 1/2 small fennel bulb -- chopped 1 fresh sage leaf -- chopped 1 tablespoon olive oil 5 cups water 1/2 teaspoon freshly ground black pepper salt to taste Saute the onion in oil for a couple of minutes. Add celery, chives, sage, fennel and cook over low heat until the vegetables soften. Add a couple tablespoons of water to prevent sticking. Add the potatoes and seasoning. Stir, cover and cook for five minutes. Add the water and bring to a boil. Cover and cook over medium heat until potatoes are soft but still somewhat firm. Add the peas, soy beans, and Swiss chard.
