Spring Soup

1 cup boiled soybeans

1 cup chopped onion

2 stalks celery -- chopped

2 medium potatoes -- peeled and diced

3 Swiss chard leaves -- cut into 1/2-inch strips

1/2 cup green peas

1/2 cup chopped chives

1/2 small fennel bulb -- chopped

1 fresh sage leaf -- chopped

1 tablespoon olive oil

5 cups water

1/2 teaspoon freshly ground black pepper

salt to taste

 

Saute the onion in oil for a couple of minutes.

 

Add celery, chives, sage, fennel and cook over low heat until the vegetables

soften. Add a couple tablespoons of water to prevent sticking.

 

Add the potatoes and seasoning. Stir, cover and cook for five minutes.

 

Add the water and bring to a boil. Cover and cook over medium heat until

potatoes are soft but still somewhat firm.

 

Add the peas, soy beans, and Swiss chard. Cook over low heat until peas are

done, about 15 minutes, then serve.
