Fast Pan Fried Potatoes

4 medium potatoes

vegetable oil

 

optional: 1/4 cup BBQ sauce, 1 teaspoon

dried tarragon

 

Peel and cut potatoes into 1/4 inch thick slices.

 

Put into microwave safe container, add a plop of water. Cover. Micro 8

minutes until tender.

 

Put potatoes into frying pan with a little oil. Saute until litely browned.

Turn occasionally.

 

When ready to serve, add tarragon and bbq sauce if desired. Toss until

heated through.

NOTES : I sprinkled it with paprika half way through cooking as the potatoes

weren't browning because I used very little oil in a non-stick pan.

My daughter didn't want the BBQ sauce nor the taragon, so I served it plain.

I can see how cooking it with a lot of oil would increase the browning and

the visual experience. It still tasted just fine without the extra oil.
