" - Sanaa Abourezk Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 10 ounces lite firm tofu -- drained 1 large ripe tomato -- cut into 1/2-inch cubes 2 pickling cucumbers -- sliced 1/4-inch thick 8 romaine lettuce leaves -- shredded 12 Greek olives -- sliced 1 teaspoon thyme 1 teaspoon black pepper 1/4 cup balsamic vinegar 1 tablespoon olive oil salt to taste Mix the thyme and black pepper in a bowl. Cut tofu into 1/2-inch cubes. Then toss gently with thyme pepper mixture until cubes are coated. Mix the vegetables and olives together. Add the tofu cubes and mix gently to avoid crumbling the tofu. To make the dressing: Mix oil, vinegar, and salt. Pour over vegetables.
