Mediterranean Roll-Ups with Feta Kalamata Spread

Amount Measure Ingredient -- Preparation Method

Feta Kalamata Spread

1/4 cup cream cheese -- at room temperature

1/4 cup feta cheese -- crumbled

1 tablespoon extra virgin olive oil

1 tablespoon red wine vinegar

1 tablespoon fresh oregano -- minced

1 clove garlic -- minced

 

2 7 inch flour tortillas

1 1/2 cups broccoli coleslaw mix

1 roma tomato -- cut in 1/8 inch slic

freshly ground black pepper -- to taste

 

To make the spread: Combine all the ingredients in a small bowl; stir until

blended

 

Spread each tortilla to the edges with half of the feta mixture. Top with

half of the coleslaw mix and a horizontal row of the tomato slices.

Sprinkle with pepper. Roll up fimly; wrap in plastic wrap and refrigerate

for at least 15 minutes.

 

Unwrap the roll ans trim to event the ends. For sandwiches, slice each roll

up diagonally into 3 sections. for appetizer servings, slice each roll-up

into 6 sections.

 

Variation: Substitute Marinated Goat Cheese for the Feta Kalamata Spread.

This recipe really caught my eye, being a lover of very strong flavors! :)

But is there an ingredient missing? There aren't any kalmatas in it ...?
