Lime pudding pots

4 tablespoons softened butter

1/4 cup caster sugar

4 tablespoons self-raising flour

6 tablespoons lime juice

1 heaped tablespoon grated lime rind

1 cup milk

4 eggs -- separated

icing sugar -- to garnish

mascarpone -- to garnish (optional)

 

Cream the butter and sugar together until pale. Stir in the flour, lime juice

and rind. Add the milk and egg yolks and beat well to combine. Beat the egg

whites separately until they form soft peaks. Gently fold the egg whites into

the pudding mixture. Pour the mixture into 8 x 150mls ramekins. Bake in a

pre-heated oven at 160C for 20-25 minutes or until the tops are just golden.

The bottom of the pudding should still be gooey.

Dust the tops with icing sugar. If you desire, serve the pudding with a little

mascarpone on the side.
