Guest guest Posted July 7, 2000 Report Share Posted July 7, 2000 * Exported from MasterCook * Surprise Sauce Recipe By :Biker Billy's Freeway-a-Fire Cookbook Serving Size : 8 Preparation Time :0:00 Categories : Freeway-a-Fire Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons butter or margarine 1 tablespoon dried minced chives 1 teaspoon ground savory 1 teaspoon ground sage 1 teaspoon dried marjoram 1/2 teaspoon dried thyme 1 tablespoon dried parsley 1 teaspoon dried basil 1/2 teaspoon salt 1/2 teaspoon cayenne pepper 1/2 teaspoon ground white pepper 2 tablespoons hot water 1 pound soft tofu -- rinsed, drained & cut into 1 " cubes 1/4 cup water -- (to 1/2 cup) Fill the bottom half of a double boiler (not quite halfway) with boiling water and place over medium heat (you don't want the top part of the double boiler to be in direct contact with the water). Every so often, check the water level to ensure that the pot does not boil dry. Keep another pot of water boiling on the stove so you can add water if necessary. Melt the butter or margarine in the top of the double boiler. Add the chives, savory, sage, marjoram, thyme, parsley, basil, salt, cayenne, and white pepper, and stir well. Add the hot water and stir well. Allow the herbs and spices to cook until they are completely rehydrated, about 2-3 minutes. In a blender or food processor equipped with a chopping blade, combine the tofu and 1/4 cup of the water and puree until smooth and creamy, about 1 minute. Add more water (up to 1/2 cup total) only if necessary to produce a smooth creamy puree. Slowly add the pureed tofu to the rehydrated herbs and spices while stirring with a wire whisk. Simmer, stirring often, until the sauce is thoroughly warm, 5-7 minutes.
