Split Personality Pea Soup

6 cups water

1 pound dried split peas -- sorted & rinsed

1/2 teaspoon salt

1 bay leaf

1 ancho pepper -- stemmed, seeded and torn into small

pieces

1 dried de arbol pepper -- (1 to 3) stemmed & crushed

1 cup boiling water

1 teaspoon celery seeds

2 tablespoons dried parsley

2 tablespoons butter beans

2 medium onions -- coarsely chopped

7 cloves garlic -- minced

2 cups baby carrots -- cut into 1/2 " thick slices

1 teaspoon salt

1 teaspoon ground black pepper

1 cup hot water -- (optional)

 

In a large soup pot over high heat, bring the water to a boil. Add the split

peas, salt, and bay leaf and boil for 10 minutes, stirring often. Reduce the

heat to medium and simmer for 30 minutes, stirring often.

 

While the soup simmers, place the ancho and de arbol peppers in a small bowl and

cover with the boiling water. Allow to cool to room temperature. In a blender

or food processor equipped with a chopping blade, puree the rehydrated peppers

and the soaking water for about 2 minutes or until smooth.

 

Remove the bay leaf from the soup and discard. Using a slotted spoon, transfer

the solids from the soup along with 1 cup of liquid to the blender or food

processor and puree until smooth, 2 minutes. Return to the soup pot and add the

celery seeds and parsley. Reduce the heat to low, cover, and stir often.

 

In a large saute pan, melt the butter over medium heat. Add the onions, garlic,

and carrots and cook until the onions begin to brown, 5-7 minutes. Transfer the

mixture to the soup pot and stir well. Add the salt & pepper and continue to

simmer until the carrots are tender, about 30 minutes. You may wish to add

some hot water to the soup if it is too thick for your taste. I like mine on

the thick and hearty side. Serve piping hot.
