Vegan Fruit Pie with Graham Cracker Crust

Amount Measure Ingredient -- Preparation Method

1 graham cracker pie crust -- store bought

3 Tablespoons tapioca

enough fruit to fill pie shell -- sliced 1/2 " thick

(peel fruit if it isn't organic)

1/4 cup sweetener of choice (brown rice syrup)

1/2 teaspoon cinnamon -- ground

1/2 teaspoon lemon peel -- dried

1/4 cup Grapenuts cereal or Dixie Diner's

Nutlettes

1/4 cup sunflower seeds, chopped nuts...

1 teaspoon granulated sweetener (organic cane

crystals)

 

Preheat oven to 375 degrees F.

 

Mix fruit, tapioca and sweetener. Let sit for 15 minutes. Add lemon peel.

Pour into graham crust.

 

Sprinkle cereal, nuts and granulated sweetener on top of pie.

 

Bake at 375 F for 30 mins. If the pie isn't sizzling, bubbling or otherwise

making noise, look at the crust. If the crust is a deeper brown and the fruit

on top is looking browned at the edges, it's ready. Can put back in over for

another 20 minutes if needed. The baking time depends on the quantity of

fruit in the pie. Don't let crust burn.

 

Every time I make this pie, it has a different combination of fruit filling.

It just depends on what is available in the kitchen.

 

Yesterday's pie was blueberries, 6 strawberries, 1/3 cup carob chips, 1 pear

and 2 apples.

 

A couple of days ago it was bananas, apples and raisins.

 

If your family likes nuts, add 1/4 chopped nuts to the pie.
