Today I will post some vegan smoothie recipes that are from the

Kiwi-Melon Smoothie

1 kiwifruit -- peeled

and cut into 8 pieces

1 cup honeydew melon cubes -- frozen

6 ounces kiwi-lemon or lemon soy yogurt

OR Key Lime soy yogurt

1 cup vanilla soy milk

1 tablespoon frozen apple juice concentrate -- thawed

 

2 servings—Dairy-free

 

This pretty, pale green smoothie is my favorite. (See if becomes yours

too.) I buy fresh, cubed melon at the salad bar or in packages, already

sliced, then cut it into cubes to freeze. Adding soy powder boosts the

protein to 22 grams.

 

In blender, combine kiwifruit, melon, yogurt, soy milk and apple juice

concentrate. Blend until smooth and creamy. Serve right away.

 

Per serving: 205 cal.; 8g prot.; 6g total fat (2g sat. fat); 32g carb.; 0

chol.; 122mg sod.; 1g fiber

 

High-protein variation: Follow the recipe, but increase soy milk to 1 1/2

cups and add 2 tablespoons soy protein powder.
