Press watermelon with back of a spoon through a fine, wire-mesh strainer, discarding pulp. Combine watermelon juice, sugar syrup, and lemon juice in a 2 quart pitcher. Chill. To serve, remove mixture from freezer, let stand at room temperature 30 minutes. Spoon half of mixture into container of an electric blender; add half of club soda. Cover and process until smooth.
