Fresh Peach Daiquiri

Amount Measure Ingredient -- Preparation Method

1 ounce frozen limeade concentrate

1 1/2 ounces light rum

1 ripe peach -- peeled & pitted

several ice cubes

 

Put all ingredients in blender. Blend until smooth. Use however many ice

cubes you need to achieve desired consistency (add only 2-3 at a time).

1 can frozen limeade concentrate -- (12-ounce) thawed

and undiluted

1 can frozen lemonade concentrate -- (12-ounce)

thawed and undiluted

1 cup Triple Sec or Cointreau

6 cups crushed ice

Margarita or kosher salt

Lime wedges

2 1/4 cups tequila -- divided

 

 

Stir together first 4 ingredients in a 4-quart plastic

container; cover and freeze until slushy, stirring

occasionally.

 

Place salt in a saucer. Rub rims of glasses with lime

wedges. Dip in salt.

 

Process 2 to 2 1/2 cups limeade mixture and 3/4 cup

tequila in a blender until desired consistency. Repeat

procedure twice with remaining limeade mixture and

tequila. Pour into prepared glasses. Yield: 9 cups.

 

Note: Limeade mixture may be frozen; let stand at room

temperature 20 to 30 minutes before blending with

tequila.

Mint Julep

1/4 cup bourbon

1 tablespoon Mint Syrup (recipe follows)

fresh mint sprigs for garnish

Mint Syrup:

1 1/2 cups fresh mint -- coarsely chopped

2 cups sugar

2 cups water

 

For Julep: Combine bourbon and syrup; serve over crushed ice and garnish

with mint sprigs.

For Mint Syrup: Tie mint in a cheesecloth bag and place in a saucepan.

Add sugar and 2 cups of water. Bring mixture to a boil. Cook, stirring

constantly, until sugar dissolves.

Remove from heat; cover and let cool. Remove and discard cheesecloth bag.

Makes 2 3/4 cups.

Watermelon Margarita

Amount Measure Ingredient -- Preparation Method

1 1/2 ounces tequila

3/4 ounce Triple Sec

3/4 ounce Midori

2 ounces sour mix

6 ounces cubed -- seeded watermelon

8 ounces ice

 

Blend all ingredients together; serve in a 14-ounce glass. Garnish with lime and

watermelon wedge.
