1/4 cup canned light coconut milk

1 cup vanilla soy milk -- chilled

2 tablespoons frozen apple juice concentrate -- thawed

1 medium banana -- sliced and frozen

 

2 servings—Dairy-free

 

Try this surprising smoothie for lunch or a light dinner when it's too hot

for anything else. You'll burst with energy while feeling pleasantly

full. Adding soy powder boosts the protein to 19 grams.

 

In blender, combine coconut milk, soy milk, apple juice concentrate and

banana. Blend until smooth and creamy. Serve right away.

 

Per serving: 177 cal.; 5g prot.; 5g total fat (1g sat. fat); 33g carb.; 0

chol.; 68mg sod.; 1g fiber

 

High-protein variation: Follow the recipe, but increase soy milk to 11/2

cups and add 2 tablespoons soy protein powder.
