Guest guest Posted July 2, 2000 Report Share Posted July 2, 2000 * Exported from MasterCook * Radical Red Bean Soup Recipe By :Biker Billy's Freeway-a-Fire Cookbook Serving Size : 8 Preparation Time :0:00 Categories : Freeway-a-Fire Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons butter 2 medium onions -- minced 2 cups baby carrots -- cut into 1/4 " thick slices 3 stalks celery -- trimmed & cut into 1/4 " thick slices 2 tablespoons chopped garlic 2 chipotle chiles canned in adobo -- minced 1 dried New Mexico pepper -- stemmed, seeded & crushed 2 16 oz cans red kidney beans -- drained & rinsed 1/2 teaspoon celery seeds 1 teaspoon dried cilantro 1 tablespoon dried parsley 1/4 teaspoon ground cumin 1 1/2 teaspoons salt 1/2 teaspoon ground black pepper 5 cups water 1 tablespoon all-purpose flour In a large soup pot, melt 2 tablespoons of the butter over medium heat. Add the onions and carrots and stir well to coat with butter. Cook until the onions are transparent, 6-8 minutes. Add the celery, garlic, and chipotle and New Mexico peppers and stir well. Cook until the onions begin to brown, 2-3 minutes. Add the kidney beans, celery seeds, cilantro, parsley, cumin, salt, black pepper, and 4 cups of the water. Bring to a boil, then reduce the heat to low. Simmer until the soup has thickened and the vegetables are tender, 1 hour.
