Guest guest Posted July 2, 2000 Report Share Posted July 2, 2000 * Exported from MasterCook * Strawberry and Hazelnut Ice Cream with Vanilla Biscuit Recipe By :Penny Oliver Serving Size : 9 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- **ICE CREAM** 1 litre vanilla ice cream -- (favourite brand) 1/4 cup castor sugar 1 cup pureed strawberries 2 tablespoons ground toasted hazelnuts **BISCUITS** 125 grams butter -- softened 125 grams castor sugar 150 grams flour 1/2 teaspoon baking powder 1/4 teaspoon vanilla essence 1 egg yolk 1 tablespoon cold water -- if required **TO ASSEMBLE THE DESSERT** 1 punnet strawberries -- hulled and sliced in half a little icing sugar -- to sweeten the strawberries and dust the biscuits Soften the ice cream at room temperature for 5 minutes. Add the sugar, pureed strawberries and ground hazelnuts and stir through. Refreeze the ice cream. To your food processor add the softened butter and castor sugar. Pulse to cream the butter and sugar for 1 minute. Add the flour, baking powder, vanilla and egg, process to form a dough. Add the water if needed to help form a smooth dough. Place the dough onto a floured board and shape into a cylinder 4cm across. Wrap the dough in plastic film and chill for 1 hour. Preheat your oven to 190 degrees C. Spread a baking tray with grease-proof paper lightly greased with butter. From the cylinder of dough, cut slices and bake well spaced for 10-15 minutes or until firm and lightly golden. Cool on a wire rack. Makes 18 biscuits. To assemble: toss the halved strawberries in a couple of tablespoons of icing sugar. Place a vanilla biscuit on a serving plate. Top with scoops of ice cream and sweetened strawberry halves. Finish the top with another biscuit dusted with icing sugar.
