Roasted Garlic Dressing

10 to 12 garlic cloves

1 cup flax oil or olive oil

1/2 cup balsamic vinegar

1/2 cup water

1 teaspoon salt

1/2 tablespoon pepper

1 tablespoon Dijon mustard

 

Seperate (but don't peel) the cloves of garlic and roast in an un-oiled pan for

10-15 minutes at 350F, turning occasionally. Set aside and peel garlic when

cool. In a blender or food processor, blend together the garlic, oil, vinegar,

water, salt, pepper, and mustard until smooth.
