Guest guest Posted June 29, 2000 Report Share Posted June 29, 2000 * Exported from MasterCook Mac * Cherry Tomato Salad Recipe By : Dave Lenweaver Serving Size : 2 Preparation Time :0:05 Categories : Salads and Dressings Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups cherry tomatoes -- halved 1 cucumber -- cut in 1/2 " cubes 1 shallot -- diced fine 3 tablespoons olive oil 1 teaspoon balsamic vinegar 1 tablespoon dried basil salt and pepper -- to taste The cucumber is optional. Cut tomatoes in halves or quarters. Dice the shallot. Peel and remove seeds from cucumber, chop into 1/2 inch cubes. Toss all in bowl with olive oil and balsamic.
