Guest guest Posted June 29, 2000 Report Share Posted June 29, 2000 * Exported from MasterCook * Thai Tofu Curry Recipe By :The Accidental Vegan - Devra Gartenstein Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 pound tofu -- cut in bite-sized cubes 3 to 4 tablespoons soy sauce juice of 1 lime 2/3 cup Veggie Stock or water 3 stalks lemon grass, if available -- cut in 2-3 inch pieces 6 to 8 lime (kafir) leaves, iif available 3 tablespoons ginger -- minced 3 to 6 cloves garlic -- finely chopped 1 onion -- diced 2 carrots -- sliced 2 cups chopped cauliflower 2 cups chopped broccoli 2 zucchini -- sliced 1 baby bok choy -- chopped 1 cup chopped green beans 8 mushrooms -- quartered Marinate the tofu in the soy sauce and lime juice. Saute the lemon grass and lime leaves (if available), along with the ginger and garlic in 1/3 cup stock for 3-5 minutes. Add the onion and half the tofu marinade. When the onion if soft, add the carrots, cauliflower, and broccoli stems with another 1/3 cup of stock. After 5 minutes, add broccoli florets and remaining vegetables, saute them until they're tender, then add the tofu and its marinade and cook another few minutes. Pick out the lemon grass and lime leaves before serving. Maybe the author forgot, the cookbook is actually just a small pamphlet, and while it's called The Accidental Vegan, the author makes liberal use of honey. Sorry I can't be more helpful.
