Stuffed Shells

1 pound frozen spinach

1 pound tofu

1 tablespoon olive oil

1 teaspoon salt

1 pound box jumbo pasta shells

1 batch Tomato Sauce

1 batch Faux Cheese

 

Steam the spinach until it softens. Crumble the tofu and blend it in a food

processor with with the oil and salt. Transfer it to a bowl and mix in the

spinach. Boil the shells until they're softened but not thoroughly cooked.

Drain them and rinse in cold water. Line the bottom of a casserole pan with a

layer of tomato sauce. Stuff the shells with the tofu-spinach mixture and

arrange them on top of the sauce. Spoon the remaining sauce on top of them, and

top with the faux cheese. Bake at 350F for 20 minutes covered and 10 minutes

uncovered.
