Guest guest Posted June 29, 2000 Report Share Posted June 29, 2000 * Exported from MasterCook * Stuffed Shells Recipe By :The Accidental Vegan - Devra Gartenstein Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound frozen spinach 1 pound tofu 1 tablespoon olive oil 1 teaspoon salt 1 pound box jumbo pasta shells 1 batch Tomato Sauce 1 batch Faux Cheese Steam the spinach until it softens. Crumble the tofu and blend it in a food processor with with the oil and salt. Transfer it to a bowl and mix in the spinach. Boil the shells until they're softened but not thoroughly cooked. Drain them and rinse in cold water. Line the bottom of a casserole pan with a layer of tomato sauce. Stuff the shells with the tofu-spinach mixture and arrange them on top of the sauce. Spoon the remaining sauce on top of them, and top with the faux cheese.
