This recipe, and the one for Tomato Sauce, which I'm also sending, are both

Faux Cheese

1 tablespoon olive oil

1/2 cup whole wheat pastry flour

1/2 cup nutritional yeast

1 teaspoon salt

1 tablespoon mustard

3 cups water

 

Cook the flour and nutritional yeast in the olive oil over low heat for 2

minutes. Add 3 cups water and bring to a boil, whisking to make the mixture

smooth. Simmer until it begins to thicken, cook for 30 seconds longer, then

remove it from the heat and add the salt and mustard.

Makes 3 to 4 cups
