Dry Curry Sweet Potatoes

1 1/2 pounds medium to large sweet potatoes

2 tablespoons good-quality curry powder

1 teaspoon salt

2 tablespoons olive oil

 

Makes 4 servings.

 

Sweet potatoes that, for once, aren't achingly sweet. These have a slight

Indian accent.

 

1. Preheat the oven to 400F.

 

2. Peel the potatoes, and cut them into 1-inch chunks. Place in a

medium-sized shallow ungreased casserole. Sprinkle the curry powder and

salt and drizzle the olive oil evenly over the top.

 

3. Bake 45 minutes, turning once or twice so they brown evenly and don't

stick. Serve immediately.
