Sweet potatoes that, for once, aren't achingly sweet. These have a slight Indian accent. 1. Preheat the oven to 400F. 2. Peel the potatoes, and cut them into 1-inch chunks. Place in a medium-sized shallow ungreased casserole. Sprinkle the curry powder and salt and drizzle the olive oil evenly over the top. 3.
