Guest guest Posted June 29, 2000 Report Share Posted June 29, 2000 * Exported from MasterCook * Cherry Tomato Boboli Recipe By : Vegetables Rock! by Stephanie Pierson, page 161 Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Pizza Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons vegetable oil 1/4 cup finely chopped onion 1 1/2 pounds cherry tomatoes 1 1/4 tablespoons dried tarragon 2 tablespoons cider vinegar 1 tablespoon apple jelly salt and pepper -- to taste 2 7-inch Bobolis 1/2 cup shredded Asiago cheese Makes 4 servings for a light main course. 1. Preheat the oven to 500F. 2. Heat the oil in a large nonstick skillet, add the onion and saute until soft but not brown. 3. Add the tomatoes, cook over medium heat until they get soft and burst open, 10 to 15 minutes. 4. Add the tarragon, vinegar, and jelly; season with salt and pepper to taste. Cook over high heat, pressing down on tomatoes, until the liquid has thickened, 5 minutes. 5. Spread the mixture over tops of the Boboli crusts, and sprinkle evenly with the cheese. Bake on an ungreased cookie sheet for 8 minutes. Cut in half and serve.
