Guest guest
I found this recipe for you, Erika. It's not a crockpot version, but maybe it can be adapted. Just be sure to not add the cream until the very end. Unfortunately, as with anything called " Cream of " , this is pretty high in fat & calories. You could try using fat free evaporated milk in place of the cream. * Exported from MasterCook * Cream of Artichoke Soup Recipe By :Submitted by Holly (slightly adapted from original) Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 whole artichokes 2 cups water 2 cups vegetarian chicken broth or vegetable broth 1/2 cup dry vermouth 1 medium potato -- diced 1 small carrot -- diced 1 onion -- chopped 1 small stalk celery -- diced 2 cloves garlic -- minced 2 bay leaves 1/2 teaspoon dried marjoram 1 cup heavy whipping cream 4 tablespoons grated Romano cheese salt to taste ground black pepper to taste Steam the artichokes in 2 cups water until tender (about 45 minutes) and reserve the liquid afterwards.
