Garbanzos & Couscous

Amount Measure Ingredient -- Preparation Method

1 small onion -- chopped

3 carrots -- chopped

14 1/2 ounces can chopped tomatoes

15 ounces can garbanzo beans -- drained

1 cup veg broth

3 cloves garlic -- minced

1/4 teaspoon nutmeg -- ground

1/4 teaspoon cinnamon -- ground

1 teaspoon cumin -- ground

1/2 teaspoon turmeric -- ground

1/4 teaspoon cayenne pepper -- ground

1 1/2 cups cooked couscous

 

Combine all ingredients except couscous in crock pot. Mix thoroughly. Cover.

 

Cook on Low 8 - 10 hours or on High 3 - 4 hours.

 

Add cooked couscous during the last 15 minutes of cooking.
