When it softens, cut it into bite-sized pieces. Saute the onion and ginger in one cup of stock until the onion is tender. Add the remaining stock, carrots, and kombu pieces. Bring to a boil and simmer for 5-10 minutes. Add the soy sauce, rice noodles, peas, and tofu and simmer until the noodles are soft. Skimm off a cup of stock, dissolve the miso in it, then add this to the soup along with the rice vinegar. Makes enough to feed friends and family. When I'm sick I like to eat this soup for breakfast and dinner. - - - - - - - - - - - - - - - - - - - Per serving: 812 Calories (kcal); 24g Total Fat; (25% calories from fat); 61g Protein; 101g Carbohydrate; 0mg Cholesterol; 8602mg Sodium Food Exchanges: 3 Grain(Starch); 5 Lean Meat; 9 Vegetable; 0 Fruit; 2 Fat; 1/2 Other Carbohydrates Nutr.
