Health Brew (Miso-Noodle Soup)

1 1 1/2 oz package kombu

4 quarts Veggie Stock

1 onion -- chopped

4 tablespoons ginger

3 carrots -- sliced

1/2 cup soy sauce

1/2 pound uncooked rice noodles

1/2 pound frozen peas

3 tablespoons miso (any kind)

3 tablespoons rice vinegar

1 pound tofu -- cut in small cubes

 

Soak the kombu in enough stock to cover it. When it softens, cut it into

bite-sized pieces. Saute the onion and ginger in one cup of stock until the

onion is tender. Add the remaining stock, carrots, and kombu pieces. Bring to

a boil and simmer for 5-10 minutes. Add the soy sauce, rice noodles, peas, and

tofu and simmer until the noodles are soft. Skimm off a cup of stock, dissolve

the miso in it, then add this to the soup along with the rice vinegar.

 

Makes enough to feed friends and family. When I'm sick I like to eat this soup

for breakfast and dinner.
